Tofu Cheesecake

Ingredients:

Crust Ingredients:
3/4 cup walnuts or other nuts (chopped)
1/2 cup oats
3/4 cup whole-wheat flour
4 tbsp maple syrup
3 tbsp vegetable oil

Filling Ingredients:
1 1/4 lbs. soft tofu (patted dry)
1 lb. firm tofu (patted dry)
1/2 cup maple syrup
1/2 cup fresh lemon juice
2 tbsp vanilla extract
fruit, cocoa or any flavouring (optional)

Crust: Mix ingredients and press into an 8" pan. Bake at 375º for 10-15 minutes. Filling: Preheat oven to 350º. Purée ingredients until smooth (the longer the processing, the smoother the texture). Pour the mixture into the crust and bake for 50-60 minutes, or until a knife inserted in the centre comes out clean. Chill and serve.
