Sweet and Sour Tofu
Ingredients:
1 1/2 tsp cornstarch
3 tbsp plus 6 fl oz vegetable stock
3 tbsp distilled white vinegar
3 tbsp sugar
1 tbsp tomato ketchup
2 tbsp soy sauce
1/2 tsp salt
1/4 tsp cayenne pepper
freshly ground black pepper
1 tbsp vegetable oil
1 clove garlic, peeled
1/8 " piece ginger
1 pkg extra-firm tofu, cubed
Mix the cornstarch with 3 tbsp of the stock in a small cup. Combine the 6 fl oz stock, vinegar, sugar, ketchup, soy sauce, salt, cayenne pepper, and black pepper in a bowl. Heat the vegetable oil in a small pot, and fry the garlic and ginger until the garlic begins to brown. Remove from heat and add vinegar mixture. Return to heat and bring to a boil. Turn heat to low and simmer very gently for 4 minutes. Add cornflour mixture and cook gently until sauce thickens, then remove the garlic and ginger. Lightly fry tofu cubes in vegetable oil. Turn constantly to make sure all sides are fried. Pour heated sauce over the tofu cubes.
