RECIPES - Middle East

The Middle-East is one of the areas of the world where vegetables and grains are the predominant sources of nutrition, but meat is also eaten.

Meals from this region typically involve the use of sesame seeds, chickpeas, eggplant, garlic and olive oil. As with many of the recipes provided, there are packaged versions available if you don't have time to make it from scratch.

When lemon juice is called for, be sure to use fresh squeezed for a much better flavour; it is also more economical.

Note on ingredients: In the following recipes, there are ingredients which may be unfamiliar. Here is a brief description of what to expect:

Tahini/Tahina: Sesame seeds ground into a paste. Be cautious when buying as prepared sesame sauces are also commonly called Tahini.

Bulghur/Burgol: Wheat that has been crushed, cooked, dried and separated into fine and coarse. "Cracked wheat" is not the same as it has not been cooked

Chick Peas: Also known as Garbanzo beans, these legumes can be bought tinned in water for convenience or dried for economy. Rinse the tinned ones well as there is usually a lot of salt and other preservatives present. When using dried, soak for at least 24 hours, and also allow at least 2 hours for cooking.
