Olive Tapenade
Here is a simple yet elegant tapenade that is wonderfully adaptive. Use it as a dip with crusty bread, enrich a vegetable soup or add a zip to a pasta sauce.
Ingredients:
1 clove garlic crushed
2 tsps. chopped capers
1/2 cup chopped, pitted olives (your choice of type)
1 tbsp. chopped parsley
1/4 cup extra virgin olive oil
1 tbsp. lemon juice
Use a fork to mix all the ingredients in a small bowl. Enjoy!
