Chat Masala Corn
Chat Masala is an Indian spice blend used commonly for flavouring fruit mixtures, but in this case gives an incredible "ZING!" to grilled Corn.
In Toronto's Little India, street- vendors grill the corn on barbecues right on the sidewalk, and with a little rub of lime, and a roll in the spice, you are transported into flavour orbit!
Chat Masala can be found in any Indian grocery store, or mix a batch up with the ingredients below (also found in those same stores).
Ingredients:
4 ears of Corn, husked but with stubby "handle" part left on
for easy handling
1 Lime, cut in half
1 tbsp. Chat Masala (store bought or following ingredients)
Grill corn on barbecue or stove top grill, turning often, until slightly charred. Once the corn is cooked, rub the cut side of the lime into the Chat Masala spice mixture, and then rub over the corn. Serve!
Chat Masala Ingredients:
1 tsp. ground roasted cumin
3/4 tsp. cayenne
1/4 tsp. asafoetida powder
3/4 tsp. amchur (mango powder)
3/4 tsp. garam masala (store bought or recipe below)
1/2 tsp. black salt (not the same as regular or sea salt)
1 tsp. coarse salt
Mix ingredients together and keep in a sealed jar.
Garam Masala Ingredients:
2 tbsp green cardamom pods
3 cinnamon sticks
1 tbsp whole cloves
1/4 cup black peppercorns
1/2 cup cumin seeds
1/2 cup coriander seeds
Break open the cardamom pods, remove seeds and put aside.
Break cinnamon stick into small pieces. Combine all the spices, roast and grind
them. Store in an airtight container until ready to use.
