Jerk Tofu

Ok...I know that Tofu is not typically associated with the Islands, but I wanted to try a Jerk Seasoning recipe and I wasn't going to let some Chicken pass these lips just for that. It ended up working out really well though, so give it a try.

Ingredients:

1 package extra-firm Tofu
1 tbsp. vegetable oil
2 onions, peeled and chopped
1 scotch-bonnet/habanero or other incendiary peppers (seeded and chopped finely)
1 tbsp. chopped fresh thyme
1 tbsp. brown sugar
1/2 tsp. ground cinnamon
1/2 tsp. nutmeg
1/4 cup shoyu, tamari or other light soy sauce
1 tbsp. vinegar
1 cup uncooked rice

Chop tofu into cubes about 1 cm. by 1 cm. In a fry pan or wok, fry tofu in the oil until the outside is a golden brown.

Mix together all of the other ingredients in a mixing bowl. Marinade the tofu in the seasoning for a few hours.

Reheat tofu in the pan/wok or skewer the marinated tofu and grill on barbecue. Serve on top of rice.
