Chocolate-Coffee Pudding
Ingredients:
1/2 cup firmly packed brown sugar
1/4 cup cornstarch
3 tbsp unsweetened cocoa
1 tbsp instant coffee granules
1/8 tsp salt
2 cups soy milk
2 oz bittersweet chocolate, chopped
1 tsp vanilla extract
Combine first 5 ingredients in medium saucepan, stir well with
whisk. Gradually stir in soy milk and bring to a boil over medium heat, stirring
constantly. Reduce heat and simmer 1 minute until thick, stirring constantly.
Remove from heat and add chopped chocolate, stirring until chocolate melts.
Stir in vanilla. Pour about 1/2 cup pudding into each of 4 dessert dishes. Cover
surface with plastic wrap. Chill at least 4 hours.
