Baba Ganoush

Ingredients:

1 large eggplant
2 cloves of garlic (crushed)
3 tbsp tahini
3 tbsp lemon juice
1/2 tsp salt
Pita bread for dipping

Preheat the oven to 350°. Wash the eggplant and cut in half lengthwise. Place face down on a baking sheet and bake until soft (about 45 minutes). Remove from oven. After it cools, scoop out insides and mash with remaining ingredients, or blend in a food processor. Serve with small pieces of Pita bread for dipping.
